Oatmeal Squares

Oatmeal squares are cookie like baked snacks made with rolled oats and walnuts. Baked with added flour, eggs, vanilla flavoring, brown sugar, nutmeg and lemon extract, the oatmeal squares are richly flavored snacks that can be enjoyed anytime.
  Egg 1 , beaten
  Granulated sugar 1⁄2 Cup (8 tbs)
  Brown sugar 1⁄2 Cup (8 tbs)
  Vanilla/0.5 teaspoon lemon extract 1 Teaspoon
  Enriched flour 1⁄2 Cup (8 tbs), sifted
  Salt 1⁄2 Teaspoon
  Soda 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Shortening 1⁄3 Cup (5.33 tbs), melted
  Quick cooking rolled oats 1 Cup (16 tbs)
  Chopped california walnuts 1⁄2 Cup (8 tbs)

Combine egg, sugars, and extract; beat well.
Sift together dry ingredients; gradually add to egg mixture, beating well.
Stir in shortening, oats, and nuts.
Chill dough about 1 hour.
Spread 1/4 inch thick on greased cooky sheet, leaving 1 inch space around edges of sheet.
Bake in moderate oven (350°) till golden brown and fiat in center, about 15 minutes.
At once cut in squares; remove from pan and cool on rack
