Pan Seared Oatmeal
|Olive oil||2 Tablespoon|
|Steel cut oats||1 Cup (16 tbs)|
|Coconut milk||1 1⁄2 Cup (24 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Maple syrup||1 Tablespoon|
|Raisins||1 Teaspoon (for garnish)|
|Almonds||1 Teaspoon, crushed (for garnish)|
1. In a sauce pan, add oat meal, brown sugar, water and coconut milk.Mix everything together and bring it to a boil and reduce it to a medium low simmer until cooked.
2. In a baking dish, transfer the mixture and let it cool for 10 minutes enough for it to harden.Cut into equal servings.
3. Heat skillet over medium high heat and add olive oil or butter.Pan sear each serving on each side.
4. Top with raisins, almonds and maple syrup and serve.
