Banana Oatmeal Drops
|Butter/Margarine||3⁄4 Cup (12 tbs) (Room Temperature)|
|Light brown sugar||1 Cup (16 tbs), lightly packed|
|Mashed ripe banana||1 Cup (16 tbs) (Or 2 Large)|
|Flour||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Quick cooking rolled oats||1⁄2 Cup (8 tbs) (Uncooked)|
|Semi sweet chocolate pieces||6 Ounce (1 Cup, 1 Package)|
Preheat oven to 400°F (205°C).
In a large mixer bowl, beat butter or margarine, brown sugar and egg until light and fluffy.
Beat in bananas.
Combine flour, salt, baking soda and nutmeg.
Gradually beat into egg mixture.
Stir in oats and chocolate pieces.
Drop from a teaspoon onto ungreased cookie sheets 2 inches apart.
Bake 12 to 15 minutes or until golden brown.
Cool on wire racks.
