Coconut Oatmeal Cookies

Ingredients
  Vegetable shortening 1⁄2 Cup (8 tbs), solid
  Firmly packed light brown sugar 1⁄2 Cup (8 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Sifted all purpose flour 1 Cup (16 tbs)
  Baking powder 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Quick cooking rolled oats 1⁄2 Cup (8 tbs) (Non Instant)
  Shredded coconut 1⁄2 Cup (8 tbs)
Directions

In bowl, cream shortening with sugars; beat in egg.
Stir in flour sifted with baking powder, soda and salt.
Add oats and coconut and mix well.
Roll in small balls and place 3 inches apart on cookie sheets.
Bake in preheated moderate oven (350°F.) 7 to 10 minutes.
Makes about 2 1/2 dozen.
