Apple-icious Oatmeal Bake
|Brown sugar||1⁄3 Cup (5.33 tbs)|
|Butter||2 Tablespoon, melted|
|1% milk||2 Cup (32 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Quick cooking oats||1 1⁄2 Cup (24 tbs)|
|Red apple||1 Medium, unpeeled and cut into ¼-inch dice to make about 1 cup|
|Pecans||1⁄2 Cup (8 tbs), coarsely or finely chopped|
|Baking powder||1 1⁄2 Teaspoon|
|Ground cinnamon||1⁄4 Teaspoon (Plus More For Sprinkling)|
1. Preheat the oven to 350ºF. Lightly oil or coat an 8 X 8-inch baking pan or dish with nonstick cooking spray and set aside.
2. In a large bowl, whisk together the brown sugar and the butter until well combined. Whisk in the egg until creamy and then whisk in the milk and vanilla.
3. Stir in the oatmeal, apple, pecans, baking powder, salt, and cinnamon. Place the mixture evenly in the pan, sprinkle with additional cinnamon, and bake about 30 minutes, oruntil the top turns golden and the oatmeal is set. Scoop out and serve warm.
