Oatmeal Raisin Cookies

Ingredients
  Unsalted butter 1⁄2 Cup (8 tbs), at room temperature (1/2 Stick)
  Sugar substitute 3⁄4 Cup (12 tbs) (Granular)
  Egg 1 Large
  Vanilla extract 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Atkins quick quisine baked mix 6 Tablespoon
  Old fashioned oats/Quick cooking oats 1 Cup (16 tbs)
  Raisins 1⁄4 Cup (4 tbs)
Directions

1. Preheat oven to 350°F.
2. Combine butter and sugar substitute in a large bowl. Beat with an electric mixer until pale and creamy; beat in egg and vanilla. Add baking soda, salt, and bake mix; beat until well blended. Add oats and raisins and beat until just combined.
3. Drop 16 heaping tablespoons on an ungreased baking sheet. Bake until bottoms of cookies are browned and tops are lightly browned, 8 to 10 minutes. Cool on a rack.
