Coconut Oatmeal Cookies
|Shortening||1 Cup (16 tbs) (Spry)|
|Brown sugar||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Quick oatmeal||2 Cup (32 tbs)|
|White sugar||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Flour||1 Cup (16 tbs) (Measured Unsifted)|
|Flaked coconut||2 Cup (32 tbs)|
Cream together the Spry, white and brown sugars.
Add beaten eggs and vanilla.
Sift together flour, baking powder, soda and salt; add to creamed mixture.
Add coconut and oatmeal; mix well.
Chill; then make into balls size of English walnut.
Bake 12 to 15 minutes at 325°, using greased cookie sheet.
Dough keeps well in refrigerator for several weeks.
Yields 100 cookies.
