Chris's Oatmeal Raisin Cookies
|Margarine/Shortening||1 Cup (16 tbs)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Honey||3⁄4 Cup (12 tbs)|
|Whole wheat pastry flour||2 3⁄4 Cup (44 tbs)|
|Raw wheat germ||1⁄2 Cup (8 tbs)|
|Baking soda||1 Teaspoon|
|Baking powder||1 Teaspoon|
|Apple pie spice||1 Teaspoon|
|Thick unsweetened applesauce||1 Cup (16 tbs)|
|Oatmeal||8 Cup (128 tbs)|
|Raisins||4 Cup (64 tbs) (Or More, As Desired)|
Preheat oven to 350°.
Cream together margarine and sugar; add honey and eggs, and blend thoroughly.
In a separate bowl, mix together all the dry ingredients except oatmeal and raisins.
Stir into the egg mixture.
When thoroughly mixed, add vanilla, applesauce, oatmeal, and raisins.
Drop dough from a teaspoon onto ungreased baking sheets.
Bake 8 to 10 minutes or until done; remove immediately from tins and allow to cool on wire racks.
