Date Oatmeal Cookies
|Finely chopped pitted dates||2 Cup (32 tbs) (Or Cut)|
|Hot water||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
|Brown sugar||1 Cup (16 tbs), firmly packed|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking soda||1 Teaspoon|
|Rolled oats||2 Cup (32 tbs)|
|Melted butter/Melted margarine / vegetable shortening / salad oil||1⁄2 Cup (8 tbs)|
Combine dates, and 1 tablesp flour.
Add water; simmer 10 min, or until thickened.
Stir in vanilla.
Combine brown sugar with 1 c flour, baking soda, and oats.
Add melted butter gradually, while stirring.
Spread 1/2 oatmeal mixture in a greased or oiled pan about 12" x 8" x 1"; cover with date mixture; then sprinkle with remaining oatmeal mixture Pat with a spoon.
Bake in moderately hot oven of 375°F for 20 min, Cool in pan.
Cut into 2" squares.
