Crunchy Peanut Oatmeal Cookies

Ingredients
  Packed brown sugar 1 Cup (16 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Shortening 1⁄2 Cup (8 tbs)
  Margarine/Butter 1⁄4 Cup (4 tbs), softened
  Water 1⁄4 Cup (4 tbs)
  Egg 1
  Vanilla 1 Teaspoon
  Oatmeal 2 Cup (32 tbs) (Quick Total, Dry Variety)
  All purpose flour/Unbleached flour 1 1⁄2 Cup (24 tbs)
  Peanut butter chips 6 Ounce (1/2 Of 12 Ounce Package, 1 Cup)
  Chopped salted blanched peanuts 1 Cup (16 tbs)
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

Heat oven to 375°.
Mix sugars, shortening, margarine, water, egg and vanilla.
Stir in remaining ingredients.
Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
Bake 10 to 12 minutes or until light brown.
Immediately remove from cookie sheet.
