Peanut Butter Oatmeal Cookies
|Butter||3⁄4 Cup (12 tbs)|
|Peanut butter||1⁄2 Cup (8 tbs)|
|Granulated sugar||1 Cup (16 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Rolled oats||2 Cup (32 tbs)|
|Cocktail peanuts||1 Cup (16 tbs), chopped (or semisweet chocolate pieces)|
In a large mixing bowl beat butter and peanut butter with an electric mixer on medium speed about 30 seconds or until combined.
Add granulated sugar, brown sugar, baking powder, and baking soda.
Beat until thoroughly combined, scraping sides of bowl occasionally.
Beat in eggs and vanilla until combined.
Beat in as much of the flour as you can with the mixer.
Stir in any remaining flour.
Stir in oats and peanuts.
Drop dough by rounded teaspoons about 2 inches apart onto cookie sheets.
