Crispy Oatmeal Raisin Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1 1⁄4 Cup (20 tbs)|
|Skim milk||1⁄3 Cup (5.33 tbs)|
|Quick oats||3 Cup (48 tbs) (Not Instant Or Old Fashioned)|
|All purpose flour||1 Cup (16 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Raisins||1 Cup (16 tbs)|
Heat oven to 375Â°F.
Grease baking sheet.
Combine , brown sugar, egg whites, milk and vanilla in large bowl.
Beat at medium speed of electric mixer for 1 1/2 minutes.
Scrape sides of bowl frequently (batter may appear slightly curdled).
Combine oats, flour, salt (if used), baking soda and cinnamon in separate bowl.
Beat into above mixture at low speed until blended.
Stir in raisins.
Drop by slightly rounded measuring tablespoonfuls onto baking sheet.
Bake at 375Â°F for 8 or 9 minutes or until lightly browned.
Cool on baking sheet for 2 minutes.
Remove to wire rack.
