Coconut Oatmeal Cookies

Ingredients
  Flour 1 Cup (16 tbs), sifted
  Baking powder 1⁄2 Teaspoon (Caulmet Baking Powder)
  Salt 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Shortening 1⁄3 Cup (5.33 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Egg 1 , unbeaten
  Vanilla 1 Teaspoon
  Rolled oats 1⁄2 Cup (8 tbs)
  Flaked coconut 1 Cup (16 tbs) (Bakers Angel)
Directions

Sift flour, baking powder, salt, and soda together.
Cream shortening, add sugars gradually, and cream together until light and fluffy.
Add egg and vanilla and beat well.
Add flour, oats, and coconut and mix thoroughly.
Shape dough in small balls and place on un greased baking sheets.
Bake in moderate oven (375°F) 12 to 15 minutes.
