Plum Nut Cobbler
|Light corn syrup||3⁄4 Cup (12 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Ripe plums||2 Pound, sliced|
|Buttermilk baking mix||1 1⁄4 Cup (20 tbs)|
|Nuts||1⁄2 Cup (8 tbs), finely chopped|
|Milk||1⁄3 Cup (5.33 tbs)|
Stir together corn syrup, 1/4 cup sugar, cornstarch and cinnamon in a large bowl.
Add plums; toss to coat well.
Spoon into 8 x 8 x 2 inch baking dish.
Bake in preheated 400Â° F oven 15 minutes; remove from oven.
Stir together in a bowl buttermilk baking mix, nuts, milk and remaining 1A cup sugar until well blended; beat vigorously 20 strokes.
Drop by spoonfuls over fruit.
Bake 15 to 20 minutes, or until golden.
