Easy Spiced Nuts
|Light raw cane sugar||8 Ounce (225 Grams)|
|Ground cinnamon||1 Teaspoon|
|Orange rind||1 Tablespoon, finely grated|
|Vanilla essence||1 Teaspoon|
|Walnut halves||10 Ounce (275 Grams)|
1 In a pan, combine the sugar, cinnamon, orange rind, mace and milk.
2 Cook until the mixture reaches the soft ball stage about 113°c/236°f on a sugar thermometer.
3 Remove from the heat.
4 Stir in the butter.
5 Allow to stand for a few minutes, then blend in vanilla and nuts.
6 Stir quickly until thick.
7 Transfer the mixture on to waxed paper.
8 Using a skewer, separate the nuts.
9 Allow to dry.
10 Serve as nibbles.
