|Sifted confectioners sugar||1 Cup (16 tbs)|
|Finely ground hazelnuts/Filberts||1 Cup (16 tbs), unblanched|
|Unsweetened chocolate||1 Ounce, finely grated (1 Square)|
|Finely grated lemon rind||1⁄4 Teaspoon|
Preheat oven to 300° F.
Beat egg whites with salt until stiff peaks form; mix in remaining ingredients except cherries and drop from a half teaspoon onto ungreased, foil-lined baking sheets, spacing cookies about 1 1/2" apart.
Decorate each, if you like, with a slice of candied cherry.
Bake 20 minutes until faintly browned, remove from oven, and cool about 2 minutes before removing from foil.
Cool on wire racks.
