Hazelnut Kisses

Ingredients
  Egg whites 2
  Salt 1⁄8 Teaspoon
  Sifted confectioners sugar 1 Cup (16 tbs)
  Finely ground hazelnuts/Filberts 1 Cup (16 tbs), unblanched
  Unsweetened chocolate 1 Ounce, finely grated (1 Square)
  Cinnamon 1⁄2 Teaspoon
  Finely grated lemon rind 1⁄4 Teaspoon
Directions

Preheat oven to 300° F.
Beat egg whites with salt until stiff peaks form; mix in remaining ingredients except cherries and drop from a half teaspoon onto ungreased, foil-lined baking sheets, spacing cookies about 1 1/2" apart.
Decorate each, if you like, with a slice of candied cherry.
Bake 20 minutes until faintly browned, remove from oven, and cool about 2 minutes before removing from foil.
Cool on wire racks.
