Orange Almond Rice Ring
|Long grain rice||1 1⁄2 Cup (24 tbs)|
|Orange juice||1 Cup (16 tbs)|
|Water||2 Cup (32 tbs)|
|Salt||1 1⁄4 Tablespoon|
|Whole unblanched almonds||4|
Combine rice, orange juice, water and salt in a 2-quart casserole.
Cover and microwave 7 to 8 minutes, stirring after 3 1/2 minutes.
Let stand 10 minutes, still covered.
Microwave, covered, 4 to 5 minutes.
Butter a 5-cup fluted ring mold.
Arrange almonds in bottom; spoon rice over, packing lightly.
Microwave 3 to 5 minutes, uncovered.
Invert onto serving plate.
