Mix sugar, cinnamon, cream of tartar, and boiling water, and boil to 246 °F., or until a little of the mixture forms a firm ball when dropped in cold water.
Add the walnuts, and cool.
Add the vanilla, and stir until the mixture sugars on the nuts.
Then turn onto a flat surface and separate the nuts.
Mixed nuts or seedless raisins may be substituted for the walnuts.
