Raisin Nut Oat Cookies
|Brown sugar||1⁄2 Cup (8 tbs)|
|Safflower oil||1 Teaspoon|
|Rolled oats||1⁄2 Cup (8 tbs)|
|Unsweetened shredded coconut||1⁄2 Cup (8 tbs)|
|Nuts||1⁄2 Cup (8 tbs), chopped|
|Raisins||1⁄2 Cup (8 tbs)|
|Pure vanilla extract||1⁄2 Teaspoon|
1. Preheat the oven to 375 degrees.
2. Beat the sugar and egg together until light and fluffy. Add the remaining ingredients and mix well.
3. Drop by teaspoons 2 inches apart on an oiled baking sheet and bake for 10 minutes, or until tops are golden. Cool on the baking sheet several minutes, then carefully remove to a wire rack.
