Prunes Stuffed With Almond Paste
|Pitted dried prunes||24|
|Almond paste||1⁄4 Cup (4 tbs)|
|Coconut sugar||1⁄2 Cup (8 tbs)|
Make a slit on one side of each prune.
Press 1/2 teaspoon Almond Paste into centers.
Press a pecan half into Almond Paste in each prune.
Reform prunes around stuffing so that it just peeks out a bit.
Roll confections in Coconut Sugar until well coated.
Place in miniature-size fluted paper liners.
