Shrimp Noodle

 

Shrimp noodle, also known as shrimp roe noodle is a variant of noodle prepared with shrimp roe as one of the main ingredient. Sometimes the noodle preparations involving noodles and shrimp are also called shrimp noodles.

 

This noodle is very synonymous with Chinese cuisine and food culture of Hong Kong. It is distinguished from other noodles due to the tiny black spots on its body.

 

Shrimp roe noodle has a specific taste of its own that is why this variant of noodles is boiled and sometimes flavored with soy sauce or other hot sauces.  The black dots present on the noodle may disappear after boiling.

 

The Shrimp roe noodle is mainly prepared using tapioca flour, wheat flour, shrimp roe and monosodium glutamate. It is mostly sold in hard noodle bundles.

 

 Ingredients and Method of Preparation of Shrimp Roe Noodles
There are two basic recipes for preparing the shrimp noodles. One recipe involves directly boiling the shrimp roe noodles in water and the other preparation involves cooking the the shrimp and noodles separately and then combining them. Following are two basic recipes for making shrimp noodles.

 

  • Shrimp Roe Noodles: Water, shrimp roe noodles, and salt are required to make the shrimp noodles. The noodles themsleves are prepared with wheat flour to which shrimp roe is added as an ingredient. Flavored with salt, these noodles are cooked in water and flavored by different spices and sauces.

 

  • Shrimp Noodles: This recipe variation treats the shrimps and noodles separately. The noodles, shrimp and oyster sauce (any other sauce) are required to make this noodle dish. The shrimp is boiled in the pot with water and simultaneously the noodles are also boiled in different pot. Both the shrimp and noodles are mixed in a bowl and served after seasoning with oyster sauce. In fact any sauce of choice can be used in the preparation of dish.

 

Shrimp Noodle Recipe Variants

  • Fried noodles with Shrimp: This dish can be served as a main dish during meals and it is also considered as one of the classic dishes involving shrimp.  This Thai dish can be prepared using Thai rice noodles, garlic cloves, egg, sugar, vegetable oil, fish sauce, Asian garlic chili sauce, green onions, peanuts, and cilantro as the other ingredients. . The dish is mostly served with lime wedges.

 

  • Singaporean Shrimp Noodles: This noodle dish is synonymous with the cuisine of Singapore. It is prepared using rice stick noodles, bean sprouts, shrimp, red bell pepper, shredded Napa cabbage, carrots, green onions, minced ginger, water or chicken broth, soft brown sugar, salt, freshly ground pepper, vegetable oil, and curry powder. The vegetables and shrimp are cooked and stir-fried in separate woks. The noodles are added to the pot with shrimp and then combined with the vegetables towards the end of the cooking time. In the end both ingredients are combined and tossed with a sauce. The mixture is cooked until the sauce gets absorbed and then served hot.

 

  • Hot and Sour Shrimp Noodle Soup with Thai Herbs: This Thai dish can be served as a complete meal. It is prepared with dried rice noodles, shrimps, salt, sesame oil, chicken stock, fresh ginger, garlic cloves, lemongrass, shallots, Serrano chili peppers, Vietnamese or Thai fish sauce, sugar, fresh cilantro leaves, Asian basil leaves, lime juice, salt and pepper.  All the ingredients are cooked in a pot and served after garnishing with lime juice, herbs, pepper and salt.
