Everyday Homemade Noodles
|All purpose flour||1 1⁄3 Cup (21.33 tbs)|
|Cooking oil||2 Teaspoon|
Combine flour and salt in mixing bowl; make well in center.
Beat eggs, oil, and water together; pour into well.
Stir with fork from outside of mixture to center.
Add small amount water if necessary, so that very stiff dough is formed.
Turn onto lightly floured surface; knead until smooth and elastic (about 15 minutes).
Let rest, covered, 30 minutes.
Divide dough into 4 equal parts.
Roll 1 piece at a time as thin as possible; it should be 1/16 inch thick.
Roll up; cut into 1/2 inch strips.
Unroll strips; allow to dry several hours on lightly floured towel.
Bring several quarts salted water to boil in Dutch oven; add 1 tablespoon oil or butter.
Add noodles; stir to keep from sticking to bottom of pot.
Cook until tender; test frequently for done-ness.
Noodles should still be firm, not mushy; drain well.
Top with melted butter; serve or use in other recipes.
