Fried Soft Noodles
|Water||6 Cup (96 tbs)|
|Vegetable oil||2 Teaspoon|
|Medium noodles||4 Cup (64 tbs), uncooked|
|Vegetable oil||2 Tablespoon|
|Chopped cooked asparagus/Broccoli||1 Cup (16 tbs)|
|Grated pecorino cheese/Romano cheese||1⁄3 Cup (5.33 tbs)|
|Tomato||1 Medium, sliced (For Garnish)|
Bring water to a rapid boil in a heavy 3 quart saucepan.
Add salt and 2 teaspoons oil.
Gradually add noodles, being sure water continues to boil.
Cook noodles uncovered until tender but firm, stirring occasionally.
Heat 2 tablespoons oil in a large skillet.
Add cooked noodles and asparagus or broccoli.
Saute 4 minutes, stirring constantly.
Spoon onto a warm platter.
Sprinkle with cheese.
Toss to coat.
Place tomato slices on top.
Makes 4 to 6 servings.
