Fried Soft Noodles

Ingredients
  Water 6 Cup (96 tbs)
  Salt 1 Teaspoon
  Vegetable oil 2 Teaspoon
  Medium noodles 4 Cup (64 tbs), uncooked
  Vegetable oil 2 Tablespoon
  Chopped cooked asparagus/Broccoli 1 Cup (16 tbs)
  Grated pecorino cheese/Romano cheese 1⁄3 Cup (5.33 tbs)
  Tomato 1 Medium, sliced (For Garnish)
Directions

Bring water to a rapid boil in a heavy 3 quart saucepan.
Add salt and 2 teaspoons oil.
Gradually add noodles, being sure water continues to boil.
Cook noodles uncovered until tender but firm, stirring occasionally.
Drain.
Heat 2 tablespoons oil in a large skillet.
Add cooked noodles and asparagus or broccoli.
Saute 4 minutes, stirring constantly.
Spoon onto a warm platter.
Sprinkle with cheese.
Toss to coat.
Place tomato slices on top.
Serve immediately.
Makes 4 to 6 servings.
