Sesame Chicken With Rice Noodles

Ingredients
  Chicken thighs 750 Gram (Thigh Breast)
  Chinese rice noodles 250 Gram
  Oriental sesame oil 1 Tablespoon
  Vegetable oil 2 Tablespoon
  Ginger 1 Tablespoon, shredded
  Chinese rice wine/Dry sherry 1⁄2 Cup (8 tbs)
  Chicken stock 3 Cup (48 tbs)
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Spinach/Sliver beet 6 , chopped
Directions

With a cleaver or heavy knife chop chicken into bite-sized pieces. Soak noodles in warm water to cover for 5 minutes, then drain in a colander. Heat sesame oil with vegetable oil in a wok until it forms a haze. Add ginger and stir-fry for 30 seconds then add chicken and stir-fry until pieces are golden, about 3 minutes. Add wine, bring to the boil and add stock, sugar and salt. Simmer for 15 minutes or until chicken is tender. Stir in noodles and cook further 5 minutes; add spinach for the last minute. Ladle into 4 heated bowls.
