Ingredients
  Chinese egg noodles 250 Gram, boiled in water until tender, drain
  Skinless boneless chicken breast 2 (4 Fillets)
  Shredded green ginger 1 Tablespoon
  Chinese rice wine/Sherry 1 Tablespoon
  Cornflour 1 Teaspoon
  Cooked ham slice 3
  Canned bamboo shoots 90 Gram
  Dried chinese mushrooms 6
  Shallots 3⁄4 Bunch (75 gm) (1 Small Bunch)
  Peanut oil 7 Tablespoon
  Chicken stock 1 Cup (16 tbs)
  Sugar 1 Teaspoon
  Rice wine/Sherry 2 Tablespoon
Directions

First prepare noodles, set aside to dry on paper towels. Shred the chicken into long thin strips, mix with ginger, wine and cornflour. Cut the ham and drained bamboo shoots into long strips. Soak the mushrooms in hot water, when soft cut into strips. Cut shallots into short finger lengths. Heat 3 tablespoons oil in another wok. Add cooked, drained noodles, stir-fry over high heat, turning and stirring noodles then shaping into a 'cake'. Lower heat and cook until crisp and golden then turn to brown the other side. This takes about 6-8 minutes. Meanwhile prepare chicken. Heat 2 tablespoons oil in the wok and stir-fry the chicken 2-3 minutes, drain and set aside, discard oil. Pour 2 tablespoons oil into wok and stir-fry mushrooms, bamboo shoots and shallots for 1 minute, add the ham and chicken and stir-fry over high heat. Mix the sauce ingredients and pour into the wok, cook for 2 minutes. Mix the extra cornflour with a little water and add to wok, stirring to thicken mixture. Place crispy noodles on a serving platter and top with chicken mixture.
