Fried Shrimp Noodles

Ingredients
  Dried mushrooms 6 (Chinese)
  Raw shrimp 1⁄2 Pound (Shelled And Deveined)
  Soy sauce 2 Tablespoon
  Sherry 1 Tablespoon
  Minced ginger root 1 Teaspoon
  Cornstarch 1 Tablespoon
  Oil 5 Tablespoon
  Sliced bamboo shoots 1 Cup (16 tbs)
  Shredded cabbage 1 Cup (16 tbs)
  Salt 1 1⁄2 Teaspoon
  Cooked noodles 3 Cup (48 tbs), chilled
Directions

Soak the mushrooms in hot water 20 minutes.
Drain and slice.
Dice the shrimp and mix with the soy sauce, sherry, ginger, and cornstarch.
Heat 2 tablespoons oil in a skillet.
Cook the bamboo shoots, cabbage, mushrooms, and salt 5 minutes, stirring frequently.
Remove from pan.
Heat 1 tablespoon oil in the ,same skillet; saute the shrimp 3 minutes.
Return vegetables and cook 1 minute.
In a separate skillet, heat the remaining oil.
Add the noodles; fry 5 minutes turning them frequently.
Stir in the shrimp mixture.
Cook over high heat 2 minutes, stirring almost constantly.
