Noodles With Crab Meat, Shrimp And Pork

Ingredients
  Chinese vermicelli/Fine egg noodles 1 Pound
  Oil 1 1⁄4 Cup (20 tbs)
  Pork 1⁄4 Pound, diced
  Raw deveined shrimp 1⁄2 Pound, shelled and diced
  Crab meat 1⁄4 Pound
  Soy sauce 1 Tablespoon
  Vinegar 1 Tablespoon
  Anchovy paste 2 Teaspoon
  Sugar 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Eggs 4 , beaten
  Bean sprouts 1 Cup (16 tbs)
  Chopped scallions/Chopped chives 3 Tablespoon
  Ground coriander 1⁄4 Teaspoon
Directions

Break the vermicelli into small pieces arid plunge into boiling salted water.
Cook for 1 minute and drain well.
Spread on a flat surface to dry.
Heat 1 cup oil in a skillet; fry the vermicelli until crisp, turning it twice.
Drain.
Heat remaining oil in a skillet; saute the pork for 10 minutes.
Add the shrimp, crab meat, soy sauce, vinegar, anchovy paste, sugar, and salt; cook over low heat for 5 minutes.
Stir in the eggs until set.
Mix in the bean sprouts and vermicelli; cook 5 minutes.
Turn onto a platter; sprinkle with the, chives and coriander.
