Directions

MAKING
1) In a pot, add the diced vegetables and bring to a boil
2) Simmer the stock for about 30-40minutes
3) Using a peeler, peel ribbons off the zucchinis, parsnip, carrot and dicon
4) Par boil the ribbon in salted water
5) Take them out and put them in ice cold water to stop the cooking process
6) In a frying pan, put about 4 tablespoons of olive oil and sauté the tofu cubes till golden brown
7) Place them in a bowl
8) Sauté the onions till transparent and then sauté the mushrooms

SERVING
9) Serve the ribbons with the sautéed veggies
