Lamb Liver Pot Roast With Noodles

Ingredients
  Lamb livers 2 Pound
  Boiling water 2 Cup (32 tbs)
  All purpose flour 2 Tablespoon
  Bacon fat 3⁄4 Cup (12 tbs)
  Parsley sprigs 3
  Bay leaf 1
  Ground thyme 1⁄8 Teaspoon
  Salt 1 Tablespoon
  Pepper 3⁄4 Teaspoon
  Onion 1 , sliced
  Cooked noodles 1 Cup (16 tbs)
Directions

MAKING
1) In a saucepan, cover liver in boiling water.
2) Drain and reserve the water.
3) Pat dry livers. Dredge with flour.
4) In heavy saucepan or Dutch oven heat fat and brown on all sides.
5) Mix seasonings, onion, and reserved water.
6) Simmer covered for 1 1/2 hours till done.
8) Add flour-and-water paste and thicken.
9) Add seasoning to taste.

SERVING
10) Serve liver on hot noodles.
