Cold Sesame Noodles

Put away that Chinese take-out menu. You’re only minutes from this refreshing favorite, loaded with noodles, crisp vegetables, and a ginger-sesame dressing with a chili-garlic kick.
  Spaghetti 1 Pound
  Toasted sesame oil 6 Tablespoon
  Low sodium soy sauce 1⁄4 Cup (4 tbs)
  Grated fresh ginger 1 Tablespoon
  Chili garlic sauce 1 1⁄2 Teaspoon (Found In The Asian Section Of Your Grocery Store)
  Kosher salt 1⁄2 Teaspoon
  Kirby cucumbers 4 , quartered lengthwise and sliced
  Scallions 4 , sliced (White And Light Green Parts)
  Carrots 2 Medium, grated to make 1 cup
  Loosely packed fresh cilantro 1 Cup (16 tbs), chopped
  Peanuts 1⁄2 Cup (8 tbs), chopped

Cook the pasta according to the package directions; drain and run under cold water to cool.
Meanwhile, in a small bowl, combine the oil, soy sauce, ginger, chili-garlic sauce, and salt. In a large bowl, combine the cucumbers, scallions, carrots, cilantro, and peanuts. Add the pasta and dressing and toss to combine.
