Old Fashioned Chicken 'N' Noodles
|Broiler chicken||3 Pound, cut into pieces|
|Water||5 Cup (80 tbs)|
|Celery||1 3⁄4 Cup (28 tbs), sliced|
|Carrots||1 1⁄2 Cup (24 tbs), sliced|
|Onion||1⁄2 Cup (8 tbs), sliced|
|Parsley||2 Tablespoon, chopped|
|Egg noodles||1 Pound, uncooked|
|Mushroom stems and pieces||4 Ounce, undrained (1 Can)|
Place chicken, salt, pepper and water in 5-quart saucepan or dutch oven.
Bring to a boil; reduce heatand simmer, covered; about 1 hour or until chicken is tender.
Remove chicken; bone chicken, discard skin and cut into bite-size pieces.
Measure broth, adding enough hot water to make 6 cups of liquid.
Return broth to pan; add celery, carrots, onion and parsley.
Simmer, covered, about 15 minutes, or until vegetables are almost tender.
Bring to a boil; add noodles.
Boil, uncovered, about 5 minutes, or until noodles are tender.
Add mushrooms with liquid and chicken pieces; heat 5 minutes longer.
