Pork Strips With Peanut Sauce And Rice Noodles
|Boiling water||1⁄2 Cup (8 tbs)|
|Low fat peanut butter||1⁄2 Cup (8 tbs)|
|Rice vinegar||2 Tablespoon|
|Low sodium soy sauce||2 Tablespoon|
|Bottled minced garlic||1 Teaspoon|
|Bottled ground ginger||1 Teaspoon|
|Lime juice||2 Teaspoon|
|Sesame oil||1 Teaspoon|
|Chili paste||1 Teaspoon (With Garlic Such As Sambal Oelek)|
|Red bell pepper||2 Cup (32 tbs), sliced|
|Boneless pork loin chops||16 Ounce, trimmed and cut into 1/2-inch strips|
|Rice noodles||6 Ounce (1 Package)|
|Green onions||1⁄2 Cup (8 tbs), thinly sliced|
Combine first n ingredients in a bowl, stirring with a whisk.
Heat a large nonstick skillet over medium-hig heat.
Coat pan with cooking spray.
Add pepper and pork; cook 6 minutes or until pork is done.
Add peanut butter mixture to pan, stirring well to coat pork; bring to a boil.
Reduce heat, and simmer 1 minute.
Cook noodles according to package directions, omitting salt and fat; drain.
Add noodles to the pork mixture, tossing gently.
Sprinkle with green onions.
Serve with lime wedges, if desired.
