Pork Strips With Peanut Sauce And Rice Noodles

Ingredients
  Boiling water 1⁄2 Cup (8 tbs)
  Low fat peanut butter 1⁄2 Cup (8 tbs)
  Rice vinegar 2 Tablespoon
  Low sodium soy sauce 2 Tablespoon
  Bottled minced garlic 1 Teaspoon
  Bottled ground ginger 1 Teaspoon
  Lime juice 2 Teaspoon
  Sesame oil 1 Teaspoon
  Chili paste 1 Teaspoon (With Garlic Such As Sambal Oelek)
  Honey 1 Teaspoon
  Cornstarch 1⁄2 Teaspoon
  Cooking spray 1
  Red bell pepper 2 Cup (32 tbs), sliced
  Boneless pork loin chops 16 Ounce, trimmed and cut into 1/2-inch strips
  Rice noodles 6 Ounce (1 Package)
  Green onions 1⁄2 Cup (8 tbs), thinly sliced
Directions

Combine first n ingredients in a bowl, stirring with a whisk.

Heat a large nonstick skillet over medium-hig heat.
Coat pan with cooking spray.
Add pepper and pork; cook 6 minutes or until pork is done.
Add peanut butter mixture to pan, stirring well to coat pork; bring to a boil.
Reduce heat, and simmer 1 minute.

Cook noodles according to package directions, omitting salt and fat; drain.
Add noodles to the pork mixture, tossing gently.
Sprinkle with green onions.
Serve with lime wedges, if desired.
