Creamy Noodle Pudding
|Medium egg noodles||4 Ounce (2 1/4 Cups, Uncooked)|
|Scalded milk||2 Cup (32 tbs)|
|Eggs||2 , beaten|
|Sugar||1⁄2 Cup (8 tbs)|
|Grated lemon rind||1 Teaspoon|
|Seedless raisins||1⁄2 Cup (8 tbs)|
Cook noodles according to package directions; drain.
Meanwhile, combine milk, eggs, sugar, salt, vanilla and lemon rind.
Fold in raisins and noodles.
Pour into 6 buttered individual custard cups.
Sprinkle with nutmeg.
Set custard cups in pan of hot water.
Bake at 350° 1 hour.
Unmold into sauce dishes.
Serve warm with light cream, if desired.
