Italian Green Noodles
|Flour||2 Cup (32 tbs), sifted (enriched)|
|Eggs||2 , beaten|
|Spinach||1⁄4 Cup (4 tbs) (strained)|
|Butter||2 Tablespoon, melted|
Sift together flour and salt.
Combine remaining ingredients; add to flour.
Knead gently 1/2 minute on lightly floured surface.
Divide dough in half: roll very thin.
Let stand about 45 minutes (dough must not be sticky or too dry).
Roll like jelly roll; cut 1/4-inch slices.
Cook in boiling salted water 8 to 10 minutes.
Rinse with hot water; drain.
