Rice Noodle Pilaf
|Onions||2 , chopped|
|Uncooked white rice/Processed white rice||2 Cup (32 tbs) (Regular Variety)|
|Canned sliced mushrooms/1/2 pound fresh mushrooms, sliced||6 Ounce, drained (1 Can)|
|Medium noodles||4 Ounce|
|Salt||1 1⁄2 Teaspoon|
|Curry powder||1⁄2 Teaspoon|
|Canned chicken broth/Homemade chicken broth||4 Cup (64 tbs)|
About 1 hour and 30 minutes before serving:
1. Start heating oven to 375Â°F.
2. In 1/4 cup butter, in Dutch oven, saute onions until golden; add rice and mushrooms; saute 5 minutes, or until rice is golden.
3. Add noodles, salt, and curry powder; toss. Add chicken broth and 1/4 cup butter or margarine; heat until butter melts. Transfer to a 2-quart casserole.
4. Bake, covered, 45 minutes, or until rice is tender. Uncover casserole immediately; fluff up rice with a fork to serve.
