Chap Jae/Jap Chae is one of my favourites! Another name for "starch" noodle is Yam noodles or dang myun-I just checked my package. Great idea to cut the noodles-much easier to serve and eat that way. I have never watched anyone make chap Jae and I just make by myself from memory taste-and only one thing I add different is fermented bean chili paste and I use less oil and use a little hot water in place of some of he oil when stir frying veggies. It's really tasty with that chili paste fermented bean paste-love that stuff. Maybe a new way for Chap Jae? I look forward to learning more from you! Shanti/Mary-Anne
