Dan Dan Noodles

Ingredients
  Peanut oil 1⁄4 Cup (4 tbs)
  Raw peanuts 1⁄2 Cup (8 tbs)
  Jalapeno 1 Small, minced
  Garlic clove 1 Small, halved
  Fresh ginger slice 1 , peeled and chopped (1/4 Inch)
  Soy sauce 2 1⁄2 Tablespoon
  Water 2 Tablespoon
  Rice vinegar 1 1⁄2 Tablespoon
  Chile sauce 1 Tablespoon (Sriracha)
  Sugar 1 Tablespoon
  Asian sesame oil 1 Teaspoon
  Kosher salt To Taste
  Chow mein noodles 12 Ounce
  Julienned cucumber 1 Tablespoon (For Garnish)
  Sliced scallions 1 Tablespoon (For Garnish)
  Chopped cilantro 1 Tablespoon (For Garnish)
  Sesame seeds 2 Teaspoon (For Garnish)
  Lime halves 2 (For Garnish)
Directions

1. In a large skillet, heat the oil. Add the peanuts and fry over moderate heat until golden, 8 minutes; cool slightly. Transfer to a food processor. Add the jalapeno, garlic and ginger and process until minced. Add the soy sauce, water, rice vinegar, Sriracha, sugar and sesame oil and process until smooth. Season well with salt.
2. In a large pot of boiling, salted water, cook the noodles until al dente. Drain and rinse under cold water, then pat dry. Toss with the dressing, top with the garnishes and serve.
