Noodles With Mixed Meats And Prawns
|Peanut oil||1 Tablespoon|
|Pigs liver||1 Ounce|
|Pigs heart||1 Ounce|
|Lettuce leaves||4 Small|
|Garlic||1 Clove (5 gm), crushed|
|Ginger sherry||1 Teaspoon|
|Chicken stock||1⁄4 Pint (5/8 Cup)|
|Soy sauce||1⁄2 Teaspoon|
|Cold water||1 Tablespoon|
Drop the noodles into boiling water and cook for 4-5 minutes.
Sprinkle with a few drops of oil to keep them separate.
Cut the meats into thin slices and the prawn into slightly thicker ones.
Break the lettuce leaves into suitable pieces and slice the mushrooms.
Place them in another dish.
Heat 1 tablespoon oil in a frying-pan.
Cook the garlic in it until golden and then discard it.
Add the meats and prawn and fry for 3-4 minutes.
Add the sherry and stock and cook for 1 minute.
Add the lettuce, mushrooms, seasonings and soy sauce.
Boil rapidly, stirring together.
Finally, blend the cornflour with the water, stir it in and cook for 1 1/2 minutes, still stirring.
