Fried Soft Noodles
|Noodle dough||1⁄2 Cup (8 tbs) (1/4 Recipe)|
|Peanut oil||1 Tablespoon|
|Chicken stock||1⁄4 Pint (U.S. 5/8 Cup)|
|Salt||1 Pinch (Good Pinch)|
|Sugar||1 Pinch (Good Pinch)|
|Monosodium glutamate||1 Pinch (Ve-Tsin, Good Pinch)|
|Soy sauce||1⁄2 Teaspoon|
|Cold water||2 1⁄2 Teaspoon (1 Dessertspoon)|
|Noodles||2 Cup (32 tbs), boil for 10 minutes then drain them well|
Heat the oil and toss the onion in it for 1/2 minute.
Add the drained cooked noodles and turn them over and over to coat them with the oil.
Add the stock, seasonings and soy sauce and cook for 4-5 minutes.
Blend the cornflour with the water and stir it in, adding a little extra stock, if necessary.
Boil for 1 1/2 miinutes.
Turn all into a heated serving dish and garnish with the onion 'flowers'.
