Zucchini Noodles

Ingredients
  Fettucine 1 Pound
  Zucchini 3 Medium
  Olive oil 3 Tablespoon
  Garlic 2 Clove (10 gm), chopped
  Tarragon 1⁄2 Teaspoon, chopped
  Plain yogurt 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

In a saucepan filled with lightly salted boiling water, cook pasta following package instructions.
Drain.
Thinly slice zucchini lengthwise.
Cut each slice into fettucini like strips.
In a large skillet, heat oil.
Saute zucchini and garlic, while stirring.
In a colander, run fettucini under running hot water.
Drain.
Add to zucchini in skillet.
Season with tarragon, salt and pepper.
Continue cooking until pasta is hot.
Add yogurt, if desired.
Heat through 2 minutes.
