Alfredo Style Noodles
|Broad egg noodles||8 Ounce|
|Part skim ricotta cheese||1⁄4 Cup (4 tbs)|
|Low fat plain yogurt||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
|Unsalted margarine||1 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
Cook the noodles according to package directions, omitting the salt.
Drain well and return to the cooking pot.
Add the ricotta cheese, yogurt, Parmesan cheese, margarine, and pepper, and toss well to mix.
Transfer to a warm platter and serve with a cooked green vegetable or Marinated Vegetable Salad.
