Stuffed Nectarines

Ingredients
  Neufchatel cheese 8 Ounce
  Lemon rind 1 Teaspoon
  Lemon juice 1 Teaspoon
  Sugar 1 Tablespoon
  Chopped walnuts 2 Tablespoon
  Nectarines 12 Ounce
  Lettuce 1 Cup (16 tbs)
Directions

Combine cheese, lemon rind, 2 teaspoons lemon juice, and sugar in a bowl; beat until well blended.
Fold in walnuts; set aside.
Sprinkle remaining lemon juice evenly over cut sides of nectarine halves.
Place each on a lettuce-lined salad plate.
Top each half with 11/2 tablespoons cheese mixture.
Chill thoroughly.
