Nectarines and Tomatoes
|Plum tomatoes||2 Cup (32 tbs)|
|Minced mint/Green onions||1 Tablespoon|
1 Cut the nectarines into halves and pit them.
2 Cut the halves into generous slices.
3 Cut the tomatoes into halves.
4 In a skillet, melt margarine.
5 Add in the nectarines and saute over moderate heat for 1 minute.
6 Add in the tomatoes and continue cooking until hot and glazed, for about 1 to 2 minutes.
7 Gently shake the pan or stir during cooking.
8 Lightly season with salt and pepper.
9 Serve sprinkled with mint or green onion.
