Pepper Stuffed Nectarines

Ingredients
  Minced sweet red pepper 2 Tablespoon
  Minced sweet yellow pepper 2 Tablespoon
  Chopped fresh cilantro 4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)
  Minced purple onion 1 Tablespoon
  White wine vinegar 2 Teaspoon
  Vegetable oil 1 Teaspoon
  Chili powder 1⁄2 Teaspoon, divided
  Sugar 2 1⁄4 Teaspoon, divided
  Water 1 Cup (16 tbs)
  White wine vinegar 1⁄4 Cup (4 tbs)
  Fresh nectarines 4 Medium, peeled, halved, and pitted
Directions

Combine first 6 ingredients, 1/4 teaspoon chili powder, and 1/4 teaspoon sugar in a small bowl; stir well.
Let mixture stand at room temperature for 2 hours.
Combine remaining 1/4 teaspoon chili powder, water, vinegar, and remaining 2 teaspoons sugar in a small skillet; bring to a boil.
Add nectarine halves, spoon liquid over fruit.
Cover, reduce heat, and simmer 5 minutes or until nectarines are tender.
Drain.
