Combine pistachio pudding mix and milk in a small mixing bowl.
Beat with a fork or whipping whisk for 1 to 2 minutes or until well blended.
Set aside for 5 to 8 minutes to allow to thicken. (Mixture should be a light-syrup consistency) Divide and spread pistachio mixture on the bottom of four small dessert plates.
Cut nectarines in half.
Cut each half into ten very thin slices.
Arrange slices in a fan fashion on one side of the plate on top of the pistachio mixture.
Place alt (5 mL) "dot" of strawberry yogurt at the base of the nectarine fan.
