Nectarine Creme Fraiche
|California nectarines||2 , sliced (Fresh)|
|Low fat plain yogurt||1 Cup (16 tbs)|
|Almond extract||3 Drop|
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
Place nectarines, yogurt and almond extract in blender; blend until smooth.
Blend in honey.
Combine gelatin and water in small saucepan; let stand 1 minute to soften.
Stir over low heat until gelatin dissolves.
Add gelatin mixture to blender.
Blend 10 seconds.
Refrigerate until thickened.
Spoon into stemmed glasses and refrigerate until set.
Garnish with additional nectarine slices and mint sprigs, if desired.
