Mutton

Mutton, also used interchangeably with goat meat, is the term referred to the type of meat taken from the matured sheep, which is over two years of age; the meat of the young sheep is often referred to as lamb meat. For the reason that the meat is of an older sheep, mutton has richer flavor yet tends to be tough and hence is required to be cooked well before eating. This is why mutton always takes a long and slow cooking method. Quite indispensable in British and Middle Eastern cooking, mutton is a highly versatile and efficient food, often made into variety recipes, truly flavorful and delicious. Stewed mutton or that made in gravy is the popular mutton dish, so is mutton roast that which is often served for dinner. The fact that mutton compliments heavy spices makes it a desirable part of the spicy cuisines world over.
