Hot Mustard Recipes
MAKING 1. In top of a double boiler add mustard and vinegar stir well. 2. Cover and allow it to stand for 8 hours or overnight. 3. Add sugar eggs and salt mix well. 4. Keep over boiling water and cook 3 to 5 minutes stir constantly until thickened. SERVING 5.
Combine mustard and vinegar in top of double boiler. Add beaten eggs and sugar. Beat smooth. Stir with wooden spoon until thick about 10 minutes. Keeps indefinitely in refrigerator. Good to use on buffet table for meats etc.
Combine mustard seeds peppercorns and salt in blender blend 30 seconds. Add oil sherry and vinegar blend until thickened. Spoon into container cover stand for 2 days to develop flavor. Store in cool dark place. Keep refrigerated after opening.
Hot Grainy Mustard
Combine mustard with salt sugar and hot water. Gradually blend in remaining ingredients.
Place mustard in a bowl. Gradually stir in cold water until smooth. Stir in oil. Cover and let stand for 1 hour for the flavor to mellow. Use immediately or transfer to a small jar cover and refrigerate up to a month
