Mustard And Chive Prawn Bites
|Raw prawns||2 Pound, defrosted if frozen|
|Bay leaves||3 , crumbled|
|Snipped chives/1 tablespoon freeze- dried chives||3 Tablespoon|
|Dijon mustard||2 Tablespoon|
|Cayenne pepper||1⁄4 Teaspoon|
|Lemon juice||4 Tablespoon|
Shell and clean the prawns.
Heat a saucepan of water with the bay leaves to the boil.
Salt it generously and add the prawns.
Cook for 1-1 1/2 minutes, drain, then refresh them immediately in cold running water.
Drain well and pat the prawns dry on paper towels.
Mix the chives, mustard, cayenne pepper, and lemon juice together.
Stir the mixture into the well-drained prawns and serve skewered on cocktail picks.
