Scrambled Bananas, Kerala Style
|Raw banana||5 Large|
|Freshly grated coconut||1 Cup (16 tbs)|
|Finely chopped coriander leaves||1 Cup (16 tbs) (Fresh)|
|Green chillies||5 , deseeded|
|Fresh ginger slice||1 Inch|
|Chana dal||1 Teaspoon|
|Mustard seeds||1⁄2 Teaspoon|
|Curry leave sprig||2|
• Boil the bananas whole in hot water. Peel and grate them.
• Chop the chillies and ginger finely.
• Heat 2 tablespoons of oil along with the curry leaves and add the mustard seeds. Allow them to crackle and then add the chana dal and stir for 2 minutes. Add the finely chopped chillies and the ginger and the grated bananas and stir gently. Add the grated coconut and gently mix for 5 to 8 minutes.
• Sprinkle with the freshly chopped coriander and serve along with lunch.
